This 5-day blended (in-person and online) Food Innovation & Retail Readiness Programme is designed to attract, develop, and empower artisan food entrepreneurs, food workers, and innovators to lead the transformation of the UK’s low-carbon, sustainable food system. The programme supports ordinary food ideas to become innovative, compliant, and commercially viable products ready for UK retail, wholesale, and distribution markets.
Delivered by SACOMA Global Foods Innovation in collaboration with award-winning food innovators, chefs, academic institutions, and industry partners, the programme focuses on practical learning. Participants gain hands-on exposure to product development, factory and distribution logistics, and market access strategies that reflect real retail expectations.
The guiding principle is learning through practice—helping participants turn traditional, indigenous, and home-made recipes into trusted, healthy, and sustainable retail-ready food products aligned with current consumer trends and future food systems.

Participants will gain deep insights into Market Intelligence, Technology Intelligence, and Innovation Ecosystems, enabling smarter decision-making for food innovation and procurement. The programme covers market trend analysis, consumer behaviour tracking, competitive intelligence, technology scouting, patent awareness, and innovation landscape mapping to help identify real commercial opportunities.
You will learn how to make your product fully compliant with UK food regulations, including food safety management, due diligence, traceability, product recalls, labelling, UK standards, EPR packaging obligations, and (where applicable) UKCA marking. Training also includes product reformulation, food chemistry fundamentals, quality controls, shelf-life stability, and manufacturing specifications.
Beyond compliance, the programme supports branding, storytelling, IP protection, pricing, sales pitches, retail buyer engagement, and cost optimisation. Participants will develop sell sheets, value propositions, and go-to-market strategies, while understanding how to approach retailers, wholesalers, and distributors with confidence.
