Sweet Potato Snack Innovation Initiative

In 2016, Sacoma Foods undertook a food innovation initiative that continues to shape how we work with founders, producers, and partners today. The aim was simple but ambitious: to demonstrate how food ideas can be transformed into ready-to-retail food products through hands-on product development, market thinking, and structured guidance.

Working in collaboration with the Natural Resources Institute, this initiative challenged postgraduate students to move beyond theory and engage directly with the realities of food production and commercialisation. Using sweet potatoes sourced through Sacoma’s farmer networks, participants were guided to develop value-added snack products designed for modern consumers, including premium sweet potato crisps with globally inspired flavour profiles and nutritious snack concepts aimed at emerging markets.

What set this initiative apart was its end-to-end perspective. Participants were not simply asked to create food products; they were guided to think about consumer appeal, ingredient functionality, processing methods, presentation, and market readiness. Over several weeks, the initiative simulated real-world food business conditions, culminating in a showcase to industry stakeholders and partners.

This was not a one-off experiment. It was an early expression of a model Sacoma Foods has continued to refine: connecting farmers to markets through innovation, skills development, and commercially viable product design. The insights gained from this initiative reinforced a core belief we hold today, that many promising food ideas fail not because they lack potential, but because they lack structure, guidance, and a clear path to retail.

That belief directly informed the creation of our Ready-to-Retail Programme. The programme formalises what Sacoma Foods has already delivered in practice: guiding food founders and producers from idea to shelf through structured support in formulation readiness, compliance awareness, positioning, pricing logic, and route-to-market strategy. It is grounded in lived experience, not theory.
